About us
The Havenscourt Story
Wine making is sometimes guided by a preconceived notion of a wine taste profile and how the nuances of a particular vintage should be expressed. Many fine wines are produced using this process, but at Havenscourt we take a different approach. We believe that wines are best enjoyed with meals and that the right pairings will enhance both the food and the wine. Therefore, our approach to wine making is to start with the plate and work back to the glass. In other words, we search for flavor profiles and wine styles that compliment popular foods and make meals a complete dining experience.
How does this influence our wines and their flavor profiles? Extended, cool fermentations help maintain the acidity that makes our red wines well balanced and food friendly. Havenscourt reds are built around soft tannins, which dramatically increase the food pairing possibilities. Oak barrel aging is used to add nuances of delicate spice while softening the tannin and helping to ensure that each release is ready to enjoy when it leaves the winery.

2012 Napa Valley
Well balanced with cherry and spice flavors and gentle oak accents. After pressing, the wine was aged in 25% new French and 75% neutral French and American oak for 18-24 months. Serve with roasted pork tenderloin, baked salmon and sautéed mushrooms with herbs.

2012 Amador County
A pleasant combination of black and red berry flavors is balanced with a hint of oak leading to soft tannins and a rich, silky finish. After fermentation and gentle pressing, the wine was aged in neutral French and American oak barrels for 12 months. Serve with roasted pork, brisket and lamb.

Winemakers Blend | Zinfandel
2012 California
Sourced from sandy loam vineyards in the Sierra Foothills and northern and central San Joaquin Valley. These soils compare favorably with the Tuscany region of Italy. After fermentation and pressing, the wine was aged in a combination of second and third year French and American oak for 18 months. Rich black and red berry flavors with a hint of oak spice and soft tannins. Ideal with grilled meats, hearty pasta, burgers and pizza.
